Ingredients

  • cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • ¼ cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons pineapple juice
  • ¼ cup finely chopped dried pineapple ananas
  • ¼ cup freeze-dried dragon fruit chopped
  • ½ cup white chocolate chips optional

Instructions

  • Preheat the oven to 350°F (175°C). In a medium bowl, whisk together the flour, baking powder, and salt. In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy. Mix in the egg, vanilla extract, and pineapple juice.
  • Gradually add the dry ingredients to the wet ingredients and mix until just combined. Fold in the dried pineapple, freeze-dried dragon fruit, and white chocolate chips.
  • Line a baking sheet with parchment paper. Scoop about 2 tablespoons of dough for each cookie and place them 2 inches apart on the prepared baking sheet.
  • Bake for 10–12 minutes, or until the edges are lightly golden while the centers remain soft.
  • Allow the cookies to cool on the baking sheet for 5 minutes.
  • Transfer the cookies to a wire rack to cool completely before serving.

  • Freeze-dried dragon fruit provides vibrant color without adding excess moisture.
  • Dried pineapple works better than fresh pineapple to maintain the cookie texture.
  • Don't overmix the dough to keep the cookies soft and tender.
