Ingredients

  • 1 14-ounce package Little Smokies cocktail sausages
  • 1 pound regular-cut bacon cut into thirds
  • ¾ cup light brown sugar
  • 1 teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • Optional
  • ¼ teaspoon cayenne pepper
  • 1 tablespoon chopped fresh parsley for garnish
  • Barbecue sauce or honey mustard for serving

Instructions

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or foil. Cut each bacon slice into thirds.
  • Wrap each Little Smokie with one piece of bacon and secure with a toothpick. Arrange them in a single layer on the prepared baking sheet.
  • In a small bowl, combine the brown sugar, garlic powder, and black pepper (add cayenne if using). Sprinkle the mixture evenly over the bacon-wrapped smokies.
  • Bake for 30–35 minutes, turning halfway through, until the bacon is crispy and the brown sugar has caramelized. For extra crispy bacon, broil for 2–3 minutes at the end, watching carefully.
  • Remove the baking sheet from the oven and let the smokies rest for 5 minutes before transferring them to a serving platter.
  • Garnish with chopped parsley if desired and serve warm with barbecue sauce, honey mustard, ranch, or your favorite dipping sauce.

  • Regular-cut bacon crisps better than thick-cut bacon.
  • Pat the sausages dry before wrapping so the bacon stays in place.
  • A wire rack helps the bacon cook evenly and become crispier.
