- 2 pounds baby Yukon Gold potatoes halved
- ½ cup unsalted butter melted
- 4 garlic cloves minced
- 1 teaspoon Italian seasoning
- 1 teaspoon dried parsley
- ½ teaspoon paprika
- ½ teaspoon onion powder
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ¼ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley for garnish
- Optional: ¼ teaspoon crushed red pepper flakes
Preheat the oven to 425°F (220°C) and lightly grease a 9×13-inch baking dish.
In a large bowl, whisk together the melted butter, garlic, Italian seasoning, dried parsley, paprika, onion powder, salt, black pepper, and red pepper flakes (if using).
Add the halved potatoes and toss until every piece is evenly coated in the seasoned butter mixture.
Transfer the potatoes along with all the butter sauce to the prepared baking dish. Arrange them in a single layer with the cut sides facing down and sprinkle the Parmesan cheese evenly over the top.
Roast for 35–40 minutes, turning the potatoes halfway through, until they are fork-tender and deeply golden with crispy edges.
Remove from the oven, garnish with fresh parsley, spoon the buttery pan sauce over the potatoes, and serve immediately.
