- 1 tablespoon olive oil
- 1 pound Italian sausage mild or spicy
- 1 small onion diced
- 3 cloves garlic minced
- 2 medium carrots diced
- 2 celery stalks diced
- 1 teaspoon Italian seasoning
- ½ teaspoon dried basil
- ¼ teaspoon crushed red pepper flakes optional
- 4 cups chicken broth
- 1 14.5-ounce can diced tomatoes, undrained
- 9 ounces refrigerated cheese tortellini
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 2 cups baby spinach
- Salt and black pepper to taste
- Fresh parsley chopped (for garnish)
Heat olive oil in a large Dutch oven over medium heat. Add the Italian sausage and cook until browned, breaking it into crumbles with a wooden spoon. Drain excess grease if needed.
Add the diced onion, carrots, celery, and garlic. Cook for 5–6 minutes until the vegetables are softened and fragrant.
Stir in the Italian seasoning, dried basil, and crushed red pepper flakes. Cook for about 30 seconds until aromatic.
Pour in the chicken broth and diced tomatoes. Stir well and bring to a gentle boil. Reduce the heat and simmer for 10 minutes.
Add the cheese tortellini and cook according to the package directions, about 4–6 minutes, until tender.
Reduce the heat to low. Slowly stir in the heavy cream and Parmesan cheese until fully melted and the broth becomes smooth and creamy.
Stir in the fresh spinach and cook for 1–2 minutes until wilted.
Taste and season with salt and black pepper as needed. Garnish with fresh parsley and extra Parmesan before serving.
