Ingredients

  • 2 pounds carrots peeled and cut into sticks
  • 3 tablespoons olive oil
  • ¾ cup freshly grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley for garnish

Instructions

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Add the carrot sticks to a large mixing bowl.
  • Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, paprika, onion powder, salt, and black pepper.
  • Toss well until the carrots are evenly coated with the seasonings.
  • Add the grated Parmesan cheese and toss again so the cheese sticks to the carrots.
  • Arrange the carrots in a single layer on the prepared baking sheet, leaving space between each piece.
  • Roast for 25–30 minutes, flipping halfway through, until the carrots are tender and the Parmesan is golden and crispy.
  • Remove from the oven and let rest for 2–3 minutes.
  • Garnish with chopped fresh parsley and serve immediately.
