- 2 8-ounce blocks cream cheese, softened
- 1 packet 1 ounce ranch seasoning mix
- 1 cup low-sodium chicken broth
- 1½ cups shredded sharp cheddar cheese
- 8 slices bacon cooked and crumbled
- 2 green onions thinly sliced
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- Optional Add-Ins
- ½ teaspoon smoked paprika
- ¼ teaspoon crushed red pepper flakes
- ½ cup diced jalapeños
- 1 cup chopped spinach
Lightly grease the slow cooker with cooking spray.
Place the chicken breasts in an even layer in the bottom of the slow cooker.
Sprinkle the garlic powder, black pepper, and ranch seasoning evenly over the chicken.
Pour the chicken broth around the chicken.
Place the softened cream cheese blocks on top.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender.
Remove the chicken and shred it using two forks.
Return the shredded chicken to the slow cooker.
Add the shredded cheddar cheese and crumbled bacon.
Stir until the cheese is completely melted and the mixture is smooth and creamy.
Garnish with sliced green onions and additional bacon if desired.
Serve warm on sandwich buns, slider rolls, baked potatoes, pasta, rice, wraps, crackers, or lettuce wraps
- Full-fat cream cheese creates the richest, creamiest texture.
- Freshly shredded cheddar melts much smoother than pre-shredded cheese.
- Add the bacon at the end so it stays crispy.
- If the mixture becomes too thick, stir in a little extra chicken broth.
- Boneless skinless chicken thighs can be substituted for chicken breasts.
