Ingredients

  • Watermelon Fries
  • 1 small seedless watermelon
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon Tajín seasoning optional
  • ½ teaspoon chili powder optional
  • Fresh mint leaves for garnish
  • Coconut Lime Dip
  • 1 cup vanilla Greek yogurt
  • ¼ cup coconut cream
  • 1 tablespoon honey optional
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • ½ teaspoon vanilla extract

Instructions

  • Wash the watermelon, remove the rind, and cut it into thick fry-shaped sticks.
  • Arrange the watermelon fries in a large bowl or platter. Drizzle with lime juice and sprinkle with lime zest. Add Tajín or chili powder if desired and gently toss.
  • In a small bowl, whisk together Greek yogurt, coconut cream, honey, lime juice, lime zest, and vanilla extract until smooth and creamy.
  • Transfer the dip to a serving bowl and place it in the center of a serving platter. Arrange the watermelon fries around the dip.
  • Garnish with fresh mint leaves and extra lime zest. Serve immediately while chilled.

  • Chill the watermelon before slicing for the best flavor and texture.
  • Use a seedless watermelon for easier preparation.
  • Tajín adds a delicious sweet-spicy citrus flavor but can be omitted.
