Ingredients

  • Skewers
  • 24 cherry tomatoes
  • 24 cucumber slices
  • 24 feta cheese cubes
  • 24 Kalamata olives
  • Fresh parsley optional
  • Greek Dressing
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon red wine vinegar
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions

  • Wash and prepare the tomatoes, cucumbers, feta, and olives.
  • Thread a cherry tomato, cucumber slice, feta cube, Kalamata olive, and another cherry tomato onto each skewer.
  • Whisk together the olive oil, lemon juice, red wine vinegar, oregano, garlic powder, salt, and pepper.
  • Arrange the skewers on a serving platter and drizzle with the dressing just before serving.
  • Garnish with chopped parsley and additional oregano if desired. Serve chilled.

  • Use block feta in brine for the best flavor and texture.
  • Keep the dressing separate until serving to maintain freshness.
  • Assemble the skewers up to 24 hours ahead and refrigerate.
  • English cucumbers work best because they have fewer seeds.
