Ingredients

  • 3 ripe peaches diced
  • 1 cup diced Roma tomatoes
  • ¼ cup finely diced red onion
  • 1 jalapeño seeded and finely diced
  • ¼ cup chopped fresh cilantro
  • Juice of 1 lime about 2 tablespoons
  • 1 tablespoon extra virgin olive oil optional
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ½ teaspoon chili powder optional

Instructions

  • Wash and dry the peaches, tomatoes, cilantro, and jalapeño. Dice the peaches and tomatoes into small pieces. Finely dice the red onion and jalapeño, then chop the cilantro.
  • Add the diced peaches, tomatoes, red onion, jalapeño, and cilantro to a large mixing bowl.
  • Pour in the fresh lime juice and olive oil (if using). Add the salt, black pepper, and chili powder.
  • Gently toss everything together until evenly combined, being careful not to mash the peaches.
  • Cover and refrigerate for 20–30 minutes to allow the flavors to blend.
  • Stir once before serving and enjoy with tortilla chips, tacos, grilled chicken, fish, shrimp, burgers, or as a fresh topping for salads.

  • Use ripe but slightly firm peaches for the best texture.
  • Remove the jalapeño seeds for a milder salsa.
  • Fresh lime juice provides the best flavor.
