- Salad
- 6 cups seedless watermelon cubed
- 1 English cucumber sliced into half-moons
- 1 cup crumbled feta cheese
- ¼ cup fresh mint leaves chopped
- ¼ cup fresh basil leaves chopped (optional)
- ¼ small red onion thinly sliced
- Lime Dressing
- 2 tablespoons extra virgin olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 1 teaspoon honey optional
- ¼ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
Cut the watermelon into bite-sized cubes.
Slice the cucumber into thin half-moons and thinly slice the red onion.
Chop the fresh mint and basil.
In a small bowl, whisk together the olive oil, lime juice, lime zest, honey (if using), salt, and black pepper until well combined.
Add the watermelon, cucumber, red onion, mint, and basil to a large serving bowl.
Pour the dressing over the salad and gently toss until everything is evenly coated.
Sprinkle the crumbled feta cheese over the top.
Fold gently to combine without breaking up the watermelon or feta too much.
Chill for 10–15 minutes before serving for the best flavor.
Garnish with extra mint leaves and lime wedges, if desired, and serve immediately.
- Use chilled watermelon for the most refreshing flavor.
- Pat the watermelon cubes dry with paper towels if they're very juicy.
- Add the feta just before serving to keep its texture intact.
- Fresh mint provides the best flavor—avoid dried mint.
- Toss the salad gently to prevent the watermelon from breaking apart.
