  • 6 cups seedless watermelon cubed
  • 1 English cucumber sliced into half-moons
  • 1 cup crumbled feta cheese
  • ¼ cup fresh mint leaves chopped
  • ¼ cup fresh basil leaves chopped (optional)
  • ¼ small red onion thinly sliced
  • Lime Dressing
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon honey optional
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  • Cut the watermelon into bite-sized cubes.
  • Slice the cucumber into thin half-moons and thinly slice the red onion.
  • Chop the fresh mint and basil.
  • In a small bowl, whisk together the olive oil, lime juice, lime zest, honey (if using), salt, and black pepper until well combined.
  • Add the watermelon, cucumber, red onion, mint, and basil to a large serving bowl.
  • Pour the dressing over the salad and gently toss until everything is evenly coated.
  • Sprinkle the crumbled feta cheese over the top.
  • Fold gently to combine without breaking up the watermelon or feta too much.
  • Chill for 10–15 minutes before serving for the best flavor.
  • Garnish with extra mint leaves and lime wedges, if desired, and serve immediately.
